We have just gone through a seafood tour in Ha Long. However, Ha Long is also famous for its diversity of cuisine. Beside seafood, local and traditional food are attractive. The food has a balance of sweet, sour, salty, and spicy flavors.
When visiting Ha Long and you want to find a food gift, fried squid cake is the best choice. The food is made from fresh squid that is ground then mixed with garlic, fish sauce. The chef adds a little bit of pork fat for richness then deep fried to a golden brown until crispy exterior with tender juicy inside. People often enjoy this food along with sticky rice or Vietnamese steamed rice rolls. Fried squid cake is pounded by a traditional method, that is hand mortar and pestle. By this way the cakes end up with their signature texture and chewiness.
In Ha Long, Tien Yen is a remote district with hills and mountains. So the chicken that feeds from this area has terrific firm, lean meat. The chicken are grown on rough hills and move all day. The chicken food is the best when being boiled or roasted. After a time of boiling, the chicken's natural flavor coming out, and a sliver of salt and lime to dip it into. The simplicity of the preparation is special way in Ha Long cuisine. People love the fresh ingredients and think that they should be focused on handling, and minimal adornment.
When you find a traditional dish in Ha Long, Nem chạo Quang Yen is what you should not miss. Quang Yen is a district in HaLong which is famous for fermented pork dishes. The ingredients of this food include sliced pork mixed with roasted rice powder, herbs and a fermentation agent, which gives you both a taste of tanginess and savoyness. Diners either make their own wraps by wrapping rice paper around a range of vegetables with fresh herbs and dipping sauce, or it is served rolled up with rice paper, ready to eat. Of course there is no discussion of Ha Long cuisine without the mention of Ha Long street food scene. Street food is the staple of Ha Long’s residents, like almost all of Vietnam. You can find a lot of stalls along the streets that selling everything from grilled seafood, to noodles, to snacks, and the locals. Tourists head to stalls where the inexpensive, but highly delicious meals are sold.
Razor clams stir fried with tamarind is one of the favorite street foods for visitors in Ha Long. This dish has a combination of bright, fresh, sour tamarind, very pleasant. This deliciously hot from the wok dish is usually accompanied by a cold beer and considered a light meal or snack when watching the bay and the pouring sunset.
As mentioned above, fried squid cake is used with Steamed rice rolls. This is one of the must try street food in Ha Long as I have mentioned earlier. This dish combines two Ha Long specialties: squid cakes and some steamed rice rolls. It’s delicate rice rolls made with minced pork and mushrooms, and fried squid cakes on top. Traditionally a side of herbs and a dipping sauce of fish sauce, lime, sugar and chili, complete with a perfect combination of flavors and textures, the dish is eaten.
In general, Ha Long cuisine has a specific combined form of many types of food. The city's cuisine impresses the visitor with different flavors and different ways. The region's wealth of seafood is combined with some traditional cooking methods to produce a tapestry of the region's flavors.
